Ripe Plantain Stuffed with Bacon

 1 Pack Sabroso™ Whole Ripe Plantain
 12 tbsp Melted butter or oil; use as little as you want
 2 cups Grated mozzarella cheese. You can also add queso fresco for extra flavour
 8 oz Bacon cut into small pieces
 Ají, chimichurri, or your favourite hot sauce to serve

Preheat the oven to 400 F.

Place Plantains on a baking sheet and rub them with butter or oil.

Bake for 10-15 minutes, then turn them over. Bake for 15 minutes more or until they’re golden on both sides.

While the plantains are baking, cook the bacon pieces in a skillet until crisp, drain off the fat, and let the bacon cool down.

Remove plantains from the oven, cut lengthwise down the center of each plantain, and fill with layers of bacon and cheese.

Return pan to oven and bake for about 3-5 minutes or until cheese is completely melted and serve immediately.

Add your favourite sauce when serving.
