Green Plantain Baskets filled with Salmon

 1 Sabroso™ Green Plantain
 6 oz Salmon fillets
 4 tbsp Olive oil
 2 tbsp Dry chilli flakes
 4 Limes, freshly squeezed
 2 tbsp Fresh cilantro or parsley
 Salt and pepper to taste

Coat salmon with 2 tbsp of olive oil. Place in skillet and increase heat to high. Sprinkle with salt and pepper to taste. Cook it for 3 minutes.

Turn the salmon over and cook for 5 more minutes or until golden brown. Salmon is cooked when it flakes easily with a fork.

Remove the skin from the salmon. Place the skin in the skillet for 5 more minutes or until crunchy. Remove from heat and keep it aside to garnish later.

Place the salmon in a bowl and use a fork to shred it. Add the lime juice, chilli flakes, and 2 tbsp of olive oil. Mix well.

Cook the fried plantains for 3-5 minutes. You can deep fry them, air fry or oven toast. Let them cool down for 5 minutes. Use a lime juice squeezer or a couple of small strainers to form the plantain baskets. Remember to put some oil in the squeezer to prevent plantains from sticking.

Fill the plantain baskets with the salmon. You can garnish them with cilantro or parsley on top. Place the baskets on a serving tray, and garnish with the salmon skin, avocado, and lemon slices.
