Pre-Cooked Corn Meal
Corn is one of the most important crops around the world and it has become an essential ingredient in numerous food products. It is a staple food in the Latin kitchen, going from Tortillas to Arepas and Pupusas. Corn is also found on traditional dishes from Europe, such as Polenta in Italy or Mamaliga in Romania. Arepas Recipe
1. Pour warm water into a bowl.
2. Add salt and corn meal.
3. Knead until a smooth dough is formed.
4. Let the dough rest for 3-5 minutes.
5. Dough is ready for your favourite recipe.
6. May add cheese if desired.
7. Separate dough into portions. Take one portion in your hands and shape it into a ball, then press it between your palms to form a patty shape. Place on a griddle over medium heat for 5 minutes on each side or until desired golden brown. Can be fried as well in hot oil.
8. Serve hot.
You can use white or yellow corn meal as a thickener for soups and sauces.
Take a tablespoon of either white or yellow cornmeal and mix it with three to four tablespoons of water or milk until you have a smooth mixture. Add it to the soup or sauce, mix well and cook until you have the desired consistency.
Polenta
1. Bring 6 cups of water to a boil in a heavy large saucepan.
2. Add 2 teaspoons of salt. Gradually whisk in 1 3/4 cups of yellow corn meal.
3. Reduce the heat to low and cook until the mixture thickens and the corn meal is tender, often stirring, for about 15 minutes.
4. Turn off the heat. Add 3 tablespoons unsalted butter, and stir until melted.
