Corn Meal Crepes

 ½ cup Sabroso Pre-Cooked Yellow Corn Meal
 ½ cup White wheat flour
 ½ tbsp Salt
 1 Large egg
 1 cup Milk
 1 tbsp Melted butter
 1 tbsp Vanilla

Combine all ingredients in a large bowl and whisk to form a smooth and fairly liquid batter. Let batter rest at room temperature for 10 minutes. Add more milk or water if it gets thick.

Preheat a non-stick pan over medium heat and spray oil spray or add 1 tablespoon of butter.

Pour 1/2 cup of the batter into the pan and swirl to coat the bottom with a thin layer of batter thoroughly. Cook until the center is slightly wet, but the edges are firm about 30 seconds.

Flip and cook on the second side until the crepe can slide out of the pan with no resistance, about another 30 seconds. Transfer the crepe to a plate and repeat until you finish the batter.

Stuff with your favourite ingredients. Add ham & cheese for a delightful breakfast, or fruits, jam, and whipped cream for a tasty dessert.
