Green Fried Plantains with Guacamole Dip

 500 g Sabroso Patacón Verde / Green Fried Plantain
 Vegetable oil for frying
 Salt, to taste
For Guacamole Dip:
 2 Ripe avocados
 1 Small red onion, finely chopped
 1 Tomato, diced
 1 Jalapeño pepper, seeded and minced (optional)
 1 Garlic clove, minced
 1 Lime juice
 Salt and pepper to taste
Fry the Tostones/ Green Plantains

Heat vegetable oil in a frying pan or deep fryer over medium heat.

Once the oil is hot, carefully place the ready-to-fry green plantains in the oil for 2-3 minutes or until golden brown.

Remove the green fried plantains from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil. Sprinkle with salt to taste. Set aside.

Prepare the Guacamole Dip

Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.

Mash the avocado with a fork until it reaches your desired consistency.

Add the chopped red onion, diced tomato, minced jalapeño pepper (if using), and minced garlic to the bowl.

Squeeze the juice of one lime over the mixture and season with salt and pepper to taste. Mix everything until well combined.

Place the green fried plantains on a serving platter, and serve them alongside the guacamole dip. Enjoy by dipping the plantains into the guacamole dip.
