Spanish Tortillitas de Camarones (Shrimp Fritters)

 1 cup Sabroso™ White Corn Meal
 ¼ cup All-purpose flour
 ½ tsp Baking powder
 ¾ cup Cold water
 ½ cup Small shrimp, cooked and chopped
 ¼ cup Fresh parsley, chopped
 Salt to taste
 Vegetable oil for frying

Combine the white corn meal, flour, salt, and baking powder in a bowl.

Gradually add the cold water to the dry ingredients, stirring until a smooth batter forms.

Stir in the chopped shrimp and fresh parsley.

Heat vegetable oil in a deep skillet or pot for frying.

Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides.

Remove the fritters with a slotted spoon and drain on a paper towel.
