Put water in a medium-size pot. Add Sabroso Guava chunks, cinnamon stick, vanilla extract. Let it boil at low heat for about 20 minutes. Remove from heat and let it cool down.
Remove most of the water, leaving only a tiny bit, and then mix the guava in a blender.
Drain to remove seeds (optional).
Put the guava pulp back in the pot with the sugar. Let it boil at low heat, mixing constantly.
Remove from the heat once it starts to thicken, and let it cool down.
You can serve with a slice of cheese (fresh and mozzarella are good choices) or saltine crackers.
You can store the guava jam in a mason jar, so it lasts longer.
