Curuba Mousse

For the Mousse
 100 ml Sabroso™ Curuba/Banana Passion Fruit Pulp, defrosted
 4 Eggs
 50 ml Milk
 25 ml Boiling water
 3 Packs pectin
For the custard:
 100 ml Milk
 10 g Cornstarch
 4 Egg yolks
 120 g Sugar
 Powder vanilla
Custard:

Put the milk in a pot and cook it at a low temperature.

In a separate bowl, dissolve the cornstarch in a bit of cold milk. Add cornstarch when the milk boils.

In a separate bowl, beat the egg yolks, add the sugar, and beat until it get stiffer. Add hot milk to the egg yolks and mix.

Add the egg yolk mixture to the milk in the pot. Stir the mixture constantly with a wooden spoon to avoid curdling.

Remove from heat and keep stirring until it is cold. Then add the vanilla.
Set aside.

Mousse:

Put Sabroso Banana Passion Fruit Pulp in a large bowl. Add all the ingredients except the custard.

Mix them well and place them in a mould or dish. Put in the fridge until it sets.

Remove from mould or dish and pour custard on top.

Decor with some passion fruit seeds and serve while cold.
