Pour warm water into a bowl.
Add the salt and the corn meal.
Knead until a smooth dough is formed. Let the dough rest for 3-5 minutes. May add cheese if desired.
Separate dough into portions. Take one portion in your hands, shape it into a ball, then press it between your palms to form a patty shape.
Place on a griddle over medium heat for 5 minutes on each side or until desired golden brown. It can be fried as well in hot oil. Serve hot with ham, cheese, eggs, or shred chicken.
